One of my favorite ingredients to cook with alone is avocado. It’s healthy, easy, nutritious and more than that, super simple.

I started eating avocados daily during high school in New Zealand, and wrote a blog called ‘Cindy Likes Avocados’. Now I live in Japan, I’m still enjoying avocados, albeit from Mexico.
This is completely irrelevant, but I have recently been into Bobby Womack’s song Across From 110th Street, after I heard it on the film Jackie Brown. Having felt quite worn out by work lately, the quiet dignity of the main characters really stuck with me, how they faced life and problems.

A simple way to enjoy a ripe avocado is simply to chill it in the freezer. Then serve sliced. It has a firmer, texture like ice cream, and butteriness.

Another personal favorite is avocado with lemon or lime.

Finally, you cannot beat an avocado scallop carpaccio which is simply Sashimi grade scallops sliced in half, with avocado, a squeeze of lemon or lime and ponzu sauce to finish.


It’s also nice with Japanese mayonnaise.


Finally, my favorite. Tropical avocado, mango salad with imitation crab. Dice up some ripe mango, ripe avocado, and imitation crab. Toss with some rice vinegar, ponzu and lemon for zest. A seasonal variation is dill, shrimp and olive oil.
